Cook the linguine in plenty of salted water according to package instructions until al dente. Before draining, reserve about 200 ml of the cooking water.

While the pasta is cooking, heat olive oil in a large pan over medium heat. Add garlic and chili pepper (if using) and sauté for about 1 minute until fragrant but not browned.

Add the shrimp and sauté for about 1-2 minutes on each side until they are pink and just cooked through. Season with salt and pepper.

Remove the pan from heat. Add lemon juice, lemon zest, white wine, and butter. Stir well until the butter is melted and a light sauce forms.

Add the drained linguine directly to the pan with the shrimp sauce. Add some of the reserved cooking water to emulsify the sauce and coat the pasta.

Mix everything well until the linguine are evenly coated with the sauce. If needed, add more cooking water to achieve the desired consistency.

Sprinkle with freshly chopped parsley and serve immediately.
