Pasta with Vegetables in Creamy Sauce

Zutaten
- ✓400 g Pasta (e.g. Fusilli, Farfalle)
- ✓200 g Broccoli
- ✓2 pieces Carrots
- ✓1 piece Onion
- ✓2 cloves Garlic
- ✓200 ml Cream
- ✓100 ml Vegetable broth
- ✓2 tbsp Olive oil
- ✓50 g Parmesan (grated)
- ✓to taste Salt
- ✓to taste Pepper
Zubereitung

Cook the pasta in salted water according to package instructions. Divide the broccoli into florets and add it to the pot during the last 5 minutes of cooking. Peel the carrots and cut them into small cubes. Finely chop the onion and garlic.

Heat olive oil in a pan and sauté the onions until translucent.

Add the garlic and carrot cubes and sauté for about 5 minutes until the carrots are slightly soft.

Pour in the vegetable broth and cream, bring to a boil, and let it simmer briefly.

Drain the cooked pasta and broccoli and add them to the sauce in the pan.

Mix everything well and stir in the grated Parmesan until it has melted.

Season with salt and pepper to taste and serve immediately.
