Pat the roll-ups dry, lay them flat, and season with salt and pepper on both sides. Spread a thin layer of mustard on each roll-up.

Quarter the pickles lengthwise and finely dice the onions. Place a slice of bacon on each roll-up and distribute the pickles and onions on top.
